Welcome to Pizote Ciderworks

Pizote Ciderworks was founded in 2021 during the COVID pandemic. It was started like most other pandemic hobbies, just something to stay occupied. The first year was a micro production of five galons from our backyard trees. The juice was great, the cider... not so much. After some classes at local brewing warehouse, the second year was spent frantically looking for free apples throughout Santa Rosa and the west county. We learned a lot this year! The 20 galons of cider was drinkable - barely. We drank most of it, gave some of it away, but most of all, we had fun.

The third year making cider, we figured it out. The fermentation, the chemistry, the carbonation. In 2023, we found a source for fresh, raw, local, organic juice. I watched it get processed right in front of me and into the carboys. the 25 galons went straight home and we started processing. We learned a lot this year as well, made some minor adjustments and dialed in the process. All 10 cases will be consumed, but I'm affraid they won't last the year.

Some milestones...

  • 2025 - We are working on a new dedicated website for Pizote Ciderworks - stay tuned.
  • 2024 - Conical Fermenter and Chiller. This year, we took another significant step forward by upgrading to a conical fermenter with a chiller system. The conical shape allows for better yeast management and easier removal of sediment, resulting in a cleaner and more refined cider. The chiller system provides precise temperature control throughout the fermentation process, ensuring optimal conditions for yeast activity and flavor development. This upgrade has further enhanced the quality and consistency of our cider, making it even more enjoyable for our friends.
  • 2023 - Reproduceable recipie results!!!
  • 2022 - We found a source for reusable bottles - French Lemonaid. The bottles are thick and good quality
  • 2022 - Family comes in to help - with custom designer labels thanks to Ivory&Fine
  • 2021 - We had several bushels of our backyard appes, turned them into our first batch of cider.
